Hello. Meet Jibarito. Pronounced "he bar ito." It's a Puerto Rican-Chicagoan fusion, and the most tantalizing sandwich on this planet.
With our spin on it-- it's smashed and twice fried plantains as the "bread" and in between, a layer of refried beans, sliced avocados, panko-crusted tofu cutlet, and chunky slices of tomatoes. A dollop of sour cream and it's golden. Nom nom nom.
